Celebrate Chinese New Year with our Thai Peanut Slaw with spicy shrimp.  A perfect combination of flavors that will set fireworks to your senses!

Ingredients
  

  • 1 (24-ounce) package Fresh Express® 3 Color Coleslaw™
  • 16 shrimp, peeled and deveined
  • 2 red jalapeño peppers, cored, seeded, sliced
  • 1 tablespoon olive oil
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons chopped mint leaves
  • 1/4 cup unsalted, roasted peanuts, chopped

Dressing Ingredients:

  • 1 1/2 cups coconut milk
  • 1 cup unsalted, roasted peanuts
  • 1/2 cup seasoned rice vinegar
  • 1/4 cup unsweetened flaked coconut
  • 2 tablespoons brown sugar
  • 2 tablespoons fish sauce
  • 1 tablespoon lime juice
  • 1 tablespoon reduced-sodium soy sauce
  • 1 clove garlic
  • 1 teaspoon sesame oil
  • Salt and pepper to taste

Instructions
 

  • Stir fry shrimp and peppers in olive oil in a large skillet over medium heat for 5 minutes or until they are pink.
  • Combine the Fresh Express® 3 Color Coleslaw™, cilantro, and mint in a large bowl. Drizzle with Thai peanut dressing; toss to coat.
  • Divide slaw evenly into four bowls; top each with four cooked shrimp and peppers. Sprinkle with peanuts.

Dressing Instructions:

  • Process all ingredients in a blender until smooth.
