blanched

small red onion
peeled and thinly sliced

cherry tomatoes

Meat from a 1.5 lb raw lobster
cooked and cubed

avocado
diced
Dressing Ingredients:

Tablespoons
crème fraiche

Tablespoons
nonfat plain Greek yogurt

teaspoons
honey

teaspoon
curry powder
1/4
teaspoon
ground cumin
1/2
lemon
juiced
Instructions
In a large mixing bowl combine spring mix, corn, onion and tomatoes with the dressing.
Arrange salad onto three plates. Top each salad with lobster and avocado.
Dressing Instructions:
Whisk together all ingredients in a serving bowl.
