Lobster Salad with Curry Crème Fraiche Dressing

  • Fresh Express Spring Mix
  • 1 cup frozen corn blanched
  • 1/2 small red onion peeled and thinly sliced
  • 1 cup cherry tomatoes halved
  • Meat from a 1.5 lb raw lobster cooked and cubed
  • 1/2 avocado diced

Dressing Ingredients:

  • 2 Tablespoons crème fraiche
  • 2 Tablespoons nonfat plain Greek yogurt
  • 2 teaspoons honey
  • 1/4 teaspoon curry powder
  • 1/4 teaspoon ground cumin
  • 1/2 lemon juiced


  • In a large mixing bowl combine spring mix, corn, onion and tomatoes with the dressing.
  • Arrange salad onto three plates. Top each salad with lobster and avocado.

Dressing Instructions:

  • Whisk together all ingredients in a serving bowl.
