Lobster Salad with Curry Crème Fraiche Dressing
If you love Lobster Rolls, you'll love this better-for-you salad!
- Fresh Express Spring Mix
- 1 cup frozen corn blanched
- 1/2 small red onion peeled and thinly sliced
- 1 cup cherry tomatoes halved
- Meat from a 1.5 lb raw lobster cooked and cubed
- 1/2 avocado diced
- 2 Tablespoons crème fraiche
- 2 Tablespoons nonfat plain Greek yogurt
- 2 teaspoons honey
- 1/4 teaspoon curry powder
- 1/4 teaspoon ground cumin
- 1/2 lemon juiced
In a large mixing bowl combine spring mix, corn, onion and tomatoes with the dressing.
Arrange salad onto three plates. Top each salad with lobster and avocado.
