Heat oven to 375°F. Set a wire rack on a baking sheet. Coat rack with cooking spray.
Place eggs into a shallow bowl. Add salt and pepper; whisk to combine. Place crackers in another shallow bowl. Dip the chicken into the egg mixture, then dredge in the cracker mixture, coating evenly.
Place chicken on the wire rack. Bake for 35 to 40 minutes or until a thermometer inserted into the thickest part of the chicken reads 165° F. Slice into thin strips.
