Cracker-Crusted Chicken Salad

Ingredients
  

  • 2 (6-ounce) packages Fresh Express® Sweet Butter Lettuce
  • 4 boneless, skinless chicken breasts (4 ounces each)
  • 1 1/2 cups whole wheat crackers, crushed
  • 2 eggs
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups cherry tomatoes, cut in half
  • 4 hard cooked eggs, cut in half
  • 2 celery stalks, sliced
  • 1/2 red onion, thinly sliced
  • 1/4 cup crumbled blue cheese
  • Vinaigrette or blue cheese dressing

Instructions
 

  • Heat oven to 375°F. Set a wire rack on a baking sheet. Coat rack with cooking spray.
  • Place eggs into a shallow bowl. Add salt and pepper; whisk to combine. Place crackers in another shallow bowl. Dip the chicken into the egg mixture, then dredge in the cracker mixture, coating evenly.
  • Place chicken on the wire rack. Bake for 35 to 40 minutes or until a thermometer inserted into the thickest part of the chicken reads 165° F. Slice into thin strips.
  • Divide Fresh Express® Sweet Butter® Lettuce evenly among four plates. Top with tomatoes, eggs, celery, and onion. Sprinkle with cheese; drizzle with dressing.
