Lime Mint Vinaigrette Ingredients:
2/3cupolive oil
Zest from 1 lime
1/2cuplime juice
2tablespoonshoney
3tablespoonsmint leaves,minced
1/4teaspoonsalt
Instructions
Arrange the Fresh Express® Spinach & Arugula on a large rectangular platter.
Place the blueberries in the upper left corner, creating a 4-inch square. Be sure to have enough spinach underneath to keep the berries from rolling off the edge.
Arrange the watermelon and feta in alternating rows, beginning and ending with watermelon. There will be three rows of watermelon and two rows of cheese.
Serve the salad with Lime Mint vinaigrette on the side.
Lime Mint Vinaigrette Instructions:
Whisk all ingredients in a small bowl.
