Ingredients

1 (9.6-ounce) package Fresh Express® Twisted Enchilada Caesar Chopped Salad Kit®
1 pound boneless skinless chicken breast
2 cups chicken stock
1 onion
1 avocado
1 bunch of fresh cilantro
1 tomato
2 tablespoons of diced chipotle in adobo

Instructions

In a pan over medium heat sear chicken until golden brown.
Add in chicken stock, cover and simmer.
When chicken is cooked to internal temperature of 165° F shred and continue cooking until stock is reduced to a sauce consistency.
Layer salad, tomatoes, onions, and avocado in a cup and top with chicken.
Garnish with cilantro and serve.
