The new Fresh Express® Butter Supreme blend is a sweet and crunchy base for this first course crabmeat salad. Serve for any special occasion.

Ingredients
  

  • 2 (5-ounce) packages Fresh Express® Butter Supreme
  • 8 ounces imitation crabmeat
  • 3 tablespoons mayonnaise
  • 2 tablespoons diced red pepper
  • 3 teaspoons lemon juice
  • 1/2 cup dried cherries
  • 1/3 cup slivered almonds, toasted
  • Crackers

Lemon Vinaigrette Ingredients:

  • 2 tablespoons fresh lemon juice
  • 6 tablespoons olive oil
  • 1/2 teaspoon sugar
  • 1/8 teaspoon salt

Instructions
 

  • Mix the crabmeat, mayonnaise, red pepper, and lemon juice in a bowl.
  • Divide the Fresh Express® Butter Supreme lettuce evenly among four plates. Drizzle with Lemon Vinaigrette. Sprinkle with dried cherries and almonds.
  • Top with crabmeat mixture. Serve with crackers, if desired.

Lemon Vinaigrette Instructions:

  • Whisk all ingredients in a small bowl.

Notes

Lump crabmeat can also be used.
