Grilled Chicken Cobb Salad

Ingredients
  

  • 2 (9-ounce) packages Fresh Express® Premium Romaine®
  • 1/3 cup olive oil
  • 2 tablespoons lemon juice
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon garlic powder
  • 1 1/2 pounds boneless, skinless chicken thighs
  • 6 slices cooked bacon, chopped
  • 6 Campari tomatoes, cut into wedges
  • 4 hard cooked eggs, peeled, cut in half
  • 1 avocado, peeled, pitted, sliced
  • 1/2 cup red onion, thinly sliced

Dijon Dressing Ingredients

  • 1/2 cup yogurt
  • 1/2 cup olive oil
  • 3 tablespoons Dijon mustard
  • 2 tablespoons lemon juice
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons honey
  • 2 tablespoons minced fresh parsley
  • 1/2 teaspoon minced garlic
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper

Instructions
 

  • Combine the oil, lemon juice, Worcestershire sauce, mustard, Italian seasoning, salt, pepper, and garlic powder in a small bowl. Transfer to a large resealable plastic bag; add the chicken and toss to coat. Refrigerate for 30 minutes, turning the bag once or twice. Remove the chicken and discard the marinade.
  • Heat an outdoor or indoor grill to high; oil the grill grate. Grill chicken for 4 to 6 minutes a side or until it is no longer pink in the center and the internal temperature reaches 165°F.
  • Arrange the Fresh Express® Premium Romaine® on a platter. Top with the chicken, bacon, tomatoes, eggs, avocado, and onion. If you have extra ingredients, replenish them as needed. Once salad is served, drizzle each portion with Dijon Dressing. 

Dijon Dressing Instructions:

  • Whisk all ingredients in a bowl. Cover and refrigerate for 30 minutes to allow flavors to develop. Refrigerate dressing for up to two weeks.
