- 1 bag Fresh Express Lettuce Trio
- 1 Petite English cucumber, sliced into ribbons on a mandolin
- 1/2 cup frozen soy beans, shelled
- Freshly ground pepper
- 1/2 pound Dungeness crab meat, picked through for shells
- Place the Fresh Express Lettuce Trio, soy beans, cucumber ribbons and crab meat in a bowl.
- Drizzle miso dressing over salad, and toss to combine.
- Serve on four separate plates.
- 3 T. white miso
- 3 T. white or brown rice vinegar
- 1 T. light-brown sugar
- 2 t. toasted sesame oil
- 1/3 cup fresh lemon juice
- 1/4 cup vegetable oil
- 1 scallion, minced
- Coarse salt
- In a small bowl, whisk together miso, vinegar, sugar and toasted sesame oil until smooth.
- Whisk in lemon juice.
