Barbecue Chicken Salad
A quick-and-easy meal that the whole family will enjoy.
Ingredients
- 2 (11.3-ounce) packages Fresh Express® BBQ Ranch Chopped Kits®
- 1 cup your favorite barbecue sauce
- 4 pounds skin on chicken parts (legs, thighs, wings, breasts)
- Salt and pepper, to taste
- 1 cup corn kernels, cooked
Instructions
- Heat oven to 400°F. Coat a sheet pan with cooking spray.
- Season chicken with salt and pepper. Place the chicken, skin side down, on the sheet pan and roast for 25 minutes.
- Meanwhile, cook the barbecue sauce in a saucepan over low heat until warm.
- Remove chicken from oven; brush with barbecue sauce. Carefully flip the chicken, making sure not to tear the skin; brush with barbecue sauce.
- Roast chicken for another 10 minutes or until a thermometer inserted into the thickest part of the chicken reads 165° F.
- Place the greens from the Fresh Express® BBQ Ranch Chopped Kits® into a large bowl; toss with the salad dressings. Add the toppings and corn; toss to combine.
- Divide salad evenly among four plates. Serve chicken on the side.
