Bacon & Bleu Potato Salad
Oven roasted potatoes and onions combined with the Fresh Express® Bacon and Bleu Chopped Kit® makes a delicious, new style of potato salad.
Ingredients
- 1 (10.9-ounce) package Fresh Express® Bacon and Bleu Chopped Kit®
- 1-1/2 pounds baby yellow potatoes, halved
- 1 medium yellow onion, peeled, chopped
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup crispy balsamic beets
Instructions
- Heat oven to 425°F. Combine the potatoes and onion in a bowl; drizzle with olive oil and toss to coat. Sprinkle with salt and pepper; toss to combine. Spread in a single layer on a baking sheet, cut side down.
- Roast, stirring once halfway through, for 40 to 45 minutes or until the potatoes are tender. Set aside to cool to room temperature.
- Place the greens from the Fresh Express® Bacon and Bleu Chopped Kit® and roasted vegetables into a large bowl. Drizzle with the dressing; toss to coat. Arrange on a platter; sprinkle with the bacon from the kit and the balsamic beets.
