- 1 (9.9-ounce) package Fresh Express® Pomegranate Cranberry Organic Salad Kit®
- 4 organic beets, preferably a mixture of red and yellow
- 1 cup cooked organic farro
- 1/4 cup organic feta cheese
- Salt and pepper to taste
- Heat oven to 350°F.
- Individually wrap each beet in aluminum foil; place on a baking sheet. Cook for 30 minutes or until tender. Remove from foil and remove the skin. Cut into chunks; refrigerate for at least 30 minutes or until cool.
- Place the Fresh Express® Pomegranate Cranberry Organic Salad Kit® into a large bowl; toss with the salad dressing. Add the farro and feta cheese; toss to combine. Divide salad evenly among four plates. Top with beets; season with salt and pepper.
