Shrimp & Spinach Orecchiette
The Fresh Express® Spinach & Bacon Salad Kit is so versatile that you can use it to create a variety of dishes. In this recipe, combine it with orecchiette, shrimp and a lemon sauce to make a one pot meal.
Ingredients
- 2 (7.7-ounce) packages Fresh Express® Spinach & Bacon Salad Kits®
- 8 ounces orecchiette
- 1/4 cup butter
- 2 cloves garlic, minced
- Zest and juice of 1 lemon
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 pound large, cooked shrimp, peeled and deveined
- 1 cup shredded Parmesan cheese
Instructions
- Cook orecchiette in a large pot of boiling salted water according to package instructions. Reserve 1 cup cooking water; drain pasta.
- Return the reserved pasta water to the pot; bring to a simmer. Add butter, garlic, lemon juice and zest; cook and stir until butter is melted. Add orecchiette and shrimp; mix well.
- Add the spinach, red cabbage, carrots and bacon from the Fresh Express® Spinach & Bacon Salad Kits®; cook and stir until the spinach is slightly wilted. Sprinkle with Parmesan cheese; toss to coat.
- Divide spinach orecchiette mixture among four plates. Drizzle with the dressing from the Fresh Express® Spinach & Bacon Salad Kits®; sprinkle with almonds.
