Salad:
1 bag Fresh Express Fancy Greens salad
2 single-serve bags (2.5 oz) Chiquita sliced Apple Bites
1 cup Chiquita red grapes, sliced in half
1 cup goat cheese
1 cup cooked wild rice or brown rice
Orange Vinaigrette Dressing:
2 oranges, squeezed juice (or 3/4 cup store-bough orange juice)
1/2 cup olive oil
1/4 cup apple cider vinegar or white wine vinegar
2 Tbsp honey
1 Tbsp coarse-ground mustard
Salt and pepper to taste
To make salad:
Place lettuce in serving dish, then spread the remaining salad ingredients evenly on top. Drizzle the dressing over the salad, and serve.
To make dressing:
Combine all ingredinets in blender and blend for 30 seconds. Adjust with salt and pepper to taste.
Serves 4
Tips:
Add slices of baked chicken or pork to this salad to make it a healthy dinner salad. Vegetarians can add cubes of sauteed tofu or any beans.
Make a double batch of this dressing for later use. Best to use within one week. This will save you time and money.
