1 pkg Fresh Express® Spinach
12 cherry tomatoes, halved
2 cups mushrooms, sliced
1 Tbsp vegetable oil
1/2 cup onion, chopped
1/4 cup bacon, cooked crisp and crumbled
Your favorite Balsamic vinaigrette
Saute the Veggies:
Heat oil in large skillet.
Add onions and cook over med heat about 5 minutes until onion softens.
Add mushrooms and cook for 3-4 minutes, until liquid begins to evaporate.
Make the Salad:
Place greens into a large salad bowl.
Add the warm veggies and cherry tomatoes.
Drizzle with dressing and toss well to coat.
