1 pkg Fresh Express® Spring Mix
8 Tbsp cilantro, chopped
2 Tbsp yellow bell pepper, chopped
1/4 sweet red onion, thinly sliced
1 6-oz pkg Southwestern-style chicken
2 Tbsp orange juice
2 Tbsp white wine vinegar
1/4 tsp garlic, minced OR
1/2 clove garlic, crushed
1/4 tsp ground cumin
4 Tbsp canola oil
Make the Dressing:
In a small bowl, whisk dressing ingredients until smooth.
Let sit for 15 or 20 minutes to blend flavors.
Whisk just before drizzling onto salad or store in an airtight container in the refrigerator for up to 2 weeks.
Make the Salad:
Place salad greens, cilantro, yellow pepper, & onion into a large salad bowl.
Drizzle desired amount of dressing over salad & toss.
Serve onto 4 individual dishes.
Arrange chicken strips on top of each salad & serve.
