Classic Fall Salad with Pomegranates & Pears

Seasonal pomegranate seeds, pears and walnuts add wonderful flavors to this autumn salad. Serves 4
1 bag Fresh Express® Leafy Green Romaine salad
1 Chiquita Fresh & Ready avocado, sliced
2 pomegranates, seeded
1 red pear, cored and sliced
1/4 cup roasted sunflower seeds, unsalted
1 cup blue cheese, crumbled
1 cup walnuts

Dressing:
WHITE BALSAMIC DRESSING (or you can use a store-bought white balsamic dressing)
1/4 cup white balsamic vinaigrette
1/2 cup olive oil
2 tsp honey
1 Tbsp stone ground (coarse ground) mustard
1/4 cup fresh basil
Make the dressing:
Combine all ingredients in a blender and blend for 30 seconds.
Adjust with salt and pepper to taste.

Make the salad:
Place lettuce in serving dish and spread the other ingredients evenly over the lettuces. Drizzle dressing over the salad and serve


Tips:
Add slices of baked chicken or pork to this salad to make it a healthy dinner salad. Vegetarians can add cubes of sauteed tofu or your favorite beans.

Make a double batch of this dressing for later use. Best to use within one week. This will save you time and money.
