1 pkg Fresh Express® Baby Spinach
2 oz bacon strips, cut into ½” cubes
1 hard-boiled egg, chopped
2 oz chicken breast
1 Tbsp olive oil
Salt and pepper to taste
1/2 cup extra virgin olive oil
1/4 cup balsamic vinegar
Juice & zest from one fresh lime
2 tsp sugar
1/4 tsp salt
1/4 tsp black pepper
Make the Dressing:
Whisk all dressing ingredients in a small bowl.
Let sit for 15 - 20 minutes for flavors to blend.
Stir just prior to using on salad.
Refrigerate remaining dressing for up to 2 weeks.
Prepare Chicken & Bacon:
In medium skillet, cook chicken in olive oil until brown. Remove from skillet and cut into 1/2” strips.
Add bacon to skillet and cook over medium heat for 2 minutes, or until crisp.
Reduce heat to low and add dressing to bacon.
Cook bacon & dressing, stirring, for 30 seconds.
Make the Salad:
Empty greens into large salad bowl.
Pour dressing over greens & toss well.
Serve onto 4 individual dishes.
Arrange chicken strips & chopped egg on top of each salad & serve immediately.
