When our lettuces have reached their peak of maturity, it's time to harvest. That's when our important "cold chain" begins. Cold temperatures are critical to freshness, so our first goal is to cool down our leafy greens within hours after harvesting - and then we can keep them chilled along every step of the way so you can enjoy salads with just-picked flavor and freshness.
